BEETROOT WITH PICKLED RED ONIONS

Lightly pickled red onions with crunchy beetroot, croutons, sliced pickled radish, pumpkin seeds and pomegranate

Ingredients for 1 Servings

  • 2 tbsp
    olive oil
  • 4 tbsp
    white wine vinegar
  • 1 tbsp
    balsamic vinegar
  • 1 tsp
    apple cider vinegar
  • 1 tsp
    lemon juice
  • Twist
    salt
  • Twist
    pepper
  • Squeeze
    Lemon
  • Bunch

    fresh peeled beetroot

  • Bunch
    mixed herbs (garnish)
  • Handfull
    pomegranate seeds
  • 6
    radish large
  • 1
    red onion

Method

  1. Mix your olive oil, a sprinkle of salt & pepper, balsamic vinegar & lemon juice and apple cider vinegar together in a glass bowl. (add ingredients a little at a time and taste as you go).

  2. Add shredded beetroot to the oil mix, cover and leave to marinade at room temprature for 4-5 mins.
  3. In a separate bowl add the white wine vinegar and some salt and pepper, then finely slice the red onions and radish. Add to the vinegar and leave to chill in the fridge.

  4. Once shilled drain your onions and radish and mix with the beetroot in a fresh bowl adding a squeeze of lemon to taste (optional) then sprinkle with croutons (shop bought is fine) and pomegranate seeds for extra zing.

Notes

Everybody’s tastes are different so experiment with quantities until you find a mix you like. there is no right and wrong, just go for it!! :)
