CaeSAR SALAD WITH MUSHROOM / chicken

A funky spin on a classic chicken caesar salad

Ingredients for 1 Servings

  • 1 tbsp
    olive oil
  • 3 tbsp
    Caesar Dressing (shop bought is fine)
  • Sprinkle
    salt & pepper
  • 1 Head
    baby gem lettuce
  • Squeeze
    lemon
  • Bunch

    spring onions

  • Bunch
    mixed herbs (garnish)
  • Bunch
    chives
  • Handfull
    mushrooms (any wil do) :)
  • Handful
    croutons

Method

  1. In a medium hot pan lightly fry you’re mushrooms in a little olive oil and a knob of butter. Add a squeeze of lemon juice and some finely chopped garlic. Cook until golden. Don’t forget, season to taste with a sprinkle of salt & pepper.(add grilled chicken if you miss the meat)

  2. In a clean bowl add washed and chopped baby gem lettuce, sliced spring onions, a little lemon juice and some garden herbs.
  3. Garnish your salad leaves, with your fried mushrooms and add a handful of croutons

  4. Serve with toasted ciabatta and sprigs of fresh chive.

Notes

You can leave out the butter and replace the dressing with a vegan casear sauce for a healthy vegan salad.
