spring onions
In a medium hot pan lightly fry you’re mushrooms in a little olive oil and a knob of butter. Add a squeeze of lemon juice and some finely chopped garlic. Cook until golden. Don’t forget, season to taste with a sprinkle of salt & pepper.(add grilled chicken if you miss the meat)
Garnish your salad leaves, with your fried mushrooms and add a handful of croutons
