CHICKEN WITH SPRING ONION & PEPPERS

Griddled chicken with finely sliced spring onions (straight from the planter), sliced baby cucumber, red peppers and chilli.

Ingredients for 1 Servings

  • 2 tbsp
    olive oil
  • 1 tbsp
    sesame oil
  • Twist
    salt
  • Twist
    pepper
  • Squeeze
    Lemon
  • Bunch

    spring onions

  • Bunch
    mixed herbs (garnish)
  • Bunch
    kale
  • 4
    baby cucumber
  • 1
    red chilli (optional)
  • 1
    chicken breast (chopped & raw)

Method

  1. Mix your olive oil, a sprinkle of salt & pepper, sesame seed oil and black sesame seeds together in a glass bowl

  2. Add your chopped chicken pieces (1 breast) and thinly sliced red peppers to the oil mix, cover and leave to marinade at room temperature for 4-5 mins.
  3. Heat a frying pan on the hob until hot (slightly smoking)

  4. Add your chicken peppers and kale to the pan or griddle and cook until the chicken is golden brown (check to see its cooked through before you remove)
  5. Use a speed peeler or sharp knife and finely slice your spring onions and cucumber, then chop one small red chilli (optional)
  6. Mix the warm chicken and peppers in a bowl with the onions and cucumber and serve with a drizzle of olive oil and a squeeze of lemon.
