KING PRAWN GREEN SALAD

A quick alteration to our Spring Greens Salad adding king prawns as a source of protein.

Ingredients for 1 Serving

  • 2 handfuls

    baby spinach

  • 1 handful

    watercress

  • 1 handful

    rocket

  • 1 handful

    cress

  • 2 finely sliced

    radish 

  • 2 finely sliced

    spring onions

  • 1/4 small sliced

    red onion

  • 150g

    cooked king prawns

  • 1 tbsp

    sesame seeds

  • 1 tbsp

    capers

  • 1 tbsp

    olive oil

  • 1 tbsp

    lemon juice

  • pinch

    salt and pepper to taste

Method

  1. Wash and dry the spinach, watercress, rocket, and cress.

  2. Slice the radishes and red onion, and chop the spring onions.

  3. Toss all ingredients together in a bowl.

  4. Drizzle with olive oil and lemon juice, sprinkle sesame seeds and capers, season with salt and pepper.

  5. Add the king prawns, mix gently, and serve.

Notes

Everybody’s tastes are different so experiment with quantities of oil, lemon juice, salt and pepper until you find a balance you like.
