A quick alteration to our Spring Greens Salad adding king prawns as a source of protein.
baby spinach
watercress
rocket
cress
radish
spring onions
red onion
cooked king prawns
sesame seeds
capers
olive oil
lemon juice
salt and pepper to taste
Wash and dry the spinach, watercress, rocket, and cress.
Slice the radishes and red onion, and chop the spring onions.
Toss all ingredients together in a bowl.
Drizzle with olive oil and lemon juice, sprinkle sesame seeds and capers, season with salt and pepper.
Add the king prawns, mix gently, and serve.
Everybody’s tastes are different so experiment with quantities of oil, lemon juice, salt and pepper until you find a balance you like.
