MACKEREL WITH LEMON & KALE

A fresh, zingy, warm mackeral salad with crispy curly kale, lemon and peppers.

Ingredients for 1 Servings

  • 2 tbsp
    olive oil
  • 1 tsp
    sesame oil
  • Twist
    salt
  • Twist
    pepper
  • ½ tsp
    black sesame seed
  • Squeeze
    Lemon
  • Bunch
    mixed herbs (garnish)
  • Bunch
    curly kale
  • Sliced
    pepper (optional)
  • 2
    mackerel fillets
  • 6
    spring onions
  • 1/2
    lemon sliced

Method

  1. Mix your olive oil, a sprinkle of salt & pepper, sesame seed oil and black sesame seeds together in a glass bowl.

  2. Add your mackerel fillets to the oil mix, cover and leave to marinade at room temperature for 4-5 mins.
  3. Heat a frying pan on the hob until hot (slightly smoking)

  4. Lay your mackerel fillets skin side down in the hot pan (2-3 mins, then turn for 60 seconds).
  5. Remove the fish and rest to one side. Wipe the pan clean, return to the heat add a little more oil and seasoning.
  6. Add the curly kale and fry until crispy.
  7. Mix the kale in a bowl with some freshly chopped mixed garden herbs, and a few slices of lemon.
  8. Serve on a warm plate with the mackerel and a squeeze of lemon juice.
